Its day 36 for my wholelifechallenge and Im turning a corner with sharing the experience with my 3 little followers Hudson, Chloe and Lily. At ages 6, 6 and 7 its not always easy to make a full transformation but one small step in the right direction in one less step in the wrong. So lets see how to start the day with a huge smile and introduce less gluten and more yummy good for them treats.
My kids simply love waffles, there is nothing more enticing than the home cooked aroma of batter as it sizzles in a hot Iron. I myself was missing this delicious treat on my challenge until I played with a recipe and discovered not only can I make a health version but WOW it tastes amazing.

Ingredients
8 eggs (sometimes Im so lucky to get them from my friend Cindy straight from the farm :)))
1/2 cup of melted coconut oil or 1/2 cup of butter (if you can, use grassfed like Kerrygold)
3/4 cup of nut butter ( Nutzzo is my new favorite, you can go simple with almond but I love the mixed ones with all the extras)
1/2 cup of coconut flour (this flour is so light it adds a completely new texture which is just soft and airy)
1/2 cup of almond mill
sprinkle of salt
Optional – if you prefer a sweeter batter add a packet of Stevia (eq 1-2tsp of sugar – add to your liking I prefer non 🙂
1/2 tsp vanilla essence
1/2 cup of almond milk (I am loving Califia Farms Tasted Coconut almond milk) add extra if your mix is a little thick
1/2 tsp vanilla essence
The steps to yumminess
Beat eggs until fluffy
Warm butter and nut butter together then when soft / melted blend with eggs
Mix dry ingredients together and gradually add to butters and vanilla essence
Stir in milk till the consistency is a smooth thick liquid
Grease your waffle iron with melted coconut butter or oil, put in the batter and wait for yumminess!!
Now make sandwiches with your favorite treat – Im using Nutella and strawberries
Sprinkle with a little confectioners sugar and slice in half to show the oozy goodness to hungry munchkins
